Autumn Comforts. Two excellent recipes for the soul and the stomach.

As autumn rolls in, our bodies and minds start craving a little pampering. The days get shorter, the air turns crisp, and the thought of a warm, steaming dish becomes utterly irresistible. Legumes and grains are our best friends this season, thanks to their nourishing properties and their ability to warm our hearts.

Today, we’re sharing two simple and delicious recipes, perfect for those first chilly days.


🍲Chickpea and 🎃pumpkin soup with a touch of rosemary

We all love chickpeas! Chickpeas are a true treasure trove of wellness! Rich in plant-based protein, fiber, and minerals like iron and magnesium, they’re perfect for giving you the right energy without weighing you down. They help you feel full for longer and keep your gut happy.

Ingredients:

  • 250g (about 1.5 cups) dried chickpeas
  • 400g (about 14 oz) pumpkin
  • 1 clove garlic
  • 1 sprig of rosemary
  • Extra virgin olive oil
  • Salt and pepper to taste

Preparation:

  1. Soak the dried chickpeas for 12 hours, then boil them until tender.
  2. In a pot, sauté the garlic in a drizzle of olive oil. Add the cubed pumpkin and let it brown for a few minutes.
  3. Pour in the cooked chickpeas and rosemary. Cover with hot water and let it simmer for about 20 minutes, until the pumpkin is tender.
  4. Season with salt and pepper. You can blend a portion of the soup to make it creamier. Serve with a drizzle of olive oil and, if you like, a pinch of pepper.

🌾Pearled spelt with 🍄‍🟫porcini mushrooms and parsley

Why choose spelt? Farro is one of the oldest and most nutritious grains around! A great source of complex carbohydrates, fiber, and minerals, it provides steady, long-lasting energy. Plus, its chewy texture and rustic flavor make it ideal for savory and satisfying dishes.

Ingredients:

  • 200g (about 1 cup) pearled spelt
  • 300g (about 10 oz) porcini mushrooms (fresh or frozen)
  • 1 clove garlic
  • Fresh parsley
  • Extra virgin olive oil
  • Salt and pepper to taste

Preparation:

  1. Rinse the spelt and boil it in plenty of salted water according to package instructions (usually around 20-30 minutes).
  2. Meanwhile, in a frying pan, sauté the garlic in a drizzle of olive oil. Add the porcini mushrooms and cook over high heat until they’ve released their water.
  3. Drain the spelt when it’s “al dente” and add it to the pan with the mushrooms. Sauté for a couple of minutes, stirring well.
  4. Remove from heat, add the chopped fresh parsley, a drizzle of olive oil, and mix. Season with salt and pepper to taste and serve immediately.
